Head Bartender

Nobu Restaurant at the Belvedere Hotel is seeking an experienced, passionate, and creative Head Bartender to lead its bar program. The ideal candidate will be responsible for curating an innovative cocktail experience that complements the restaurant’s world-class cuisine, delivering a flawless guest journey that reflects the Nobu philosophy and the luxury hospitality standards of the Belvedere.

Key Responsibilities

Cocktail Program Development:

• Design, execute, and continuously evolve a seasonal cocktail menu that is inspired by Japanese ingredients, Mediterranean influences, and the spirit of Mykonos.

Coffee and Sake preparation
Guest Experience:

• Engage with guests to deliver personalized service, storytelling around drinks, and warm, professional hospitality.

Inventory & Cost Control:

• Oversee stock levels, order supplies, manage costs, and ensure accuracy in reporting and forecasting.

Compliance & Hygiene:

• Ensure bar operations meet health, safety, and cleanliness regulations at all times.

Collaboration:

• Work closely with the restaurant and hotel’s culinary, events, and marketing teams to align bar offerings with overall brand activations and guest experiences.

Qualifications

• Minimum 3 years in a Bartender role in a fine-dining or luxury hotel environment
• Deep knowledge of spirits, sake, and cocktail trends
• Formal training in mixology and bar management (certification preferred)
• Excellent communication skills in English (Greek or other languages are a plus)
• Strong organizational and leadership capabilities
• A passion for hospitality, storytelling, and guest engagement
• Experience working in high-volume, seasonal environments is an advantage
